GREER, SC – Although January is National Soup Month, there are so many varieties of soup – hot, cold, creamy, broth, and more – every month of the year is perfect for cozying up to a delicious bowl of soup! Soups that rank as most popular include chicken noodle, tomato and clam chowder. The soup masters at buffet-style restaurants Ryan’s®, HomeTown® Buffet, and Old Country Buffet® are sharing an easy-to-make fresh herbed tomato soup recipe that will have your family scooping up second helpings. 

Fresh Herbed Tomato Soup

Yield: 5 - 12 oz servings

3 – 12 oz cans                           Tomato Soup

2 cups                                       Milk, 2%                                  

1 cup                                        Heavy Cream              

2 cups                                       ½” diced vine ripe tomatoes

1 tsp                                         Basil, fresh, chopped                  

1 tsp                                         Oregano, fresh, chopped 

1 tsp                                         Thyme, fresh, chopped

¼ tsp                                        Black Pepper, course                 

½ tsp                                        Kosher Salt

  1. Place tomato soup, milk and heavy cream into a saucepot over medium heat.
  2. Bring to a slight boil. Stir with a wire whisk.
  3. Add tomatoes and fresh herbs to soup.
  4. Season with salt and pepper. Reduce to low heat and simmer for five minutes.

The tomatoes will be slightly soft with the aroma of fresh herbs. 

  1. Remove from heat and place in a bowl. Garnish with fresh shredded Parmesan cheese and a sprig of Oregano.
