TAKE YOUR COOKING STATUS TO “SOUPER STAR”

WITH THIS EASY-TO-MAKE FRESH HERBED TOMATO SOUP RECIPE

GREER, SC – Although January is National Soup Month, there are so many varieties of soup – hot, cold, creamy, broth, and more – every month of the year is perfect for cozying up to a delicious bowl of soup! Soups that rank as most popular include chicken noodle, tomato and clam chowder. The soup masters at buffet-style restaurants Ryan’s®, HomeTown® Buffet, and Old Country Buffet® are sharing an easy-to-make fresh herbed tomato soup recipe that will have your family scooping up second helpings.

Fresh Herbed Tomato Soup

Yield: 5 - 12 oz servings

3 – 12 oz cans                           Tomato Soup

2 cups                                       Milk, 2%

1 cup                                        Heavy Cream

2 cups                                       ½” diced vine ripe tomatoes

1 tsp                                         Basil, fresh, chopped

1 tsp                                         Oregano, fresh, chopped

1 tsp                                         Thyme, fresh, chopped

¼ tsp                                        Black Pepper, course

½ tsp                                        Kosher Salt

  1. Place tomato soup, milk and heavy cream into a saucepot over medium heat.
  2. Bring to a slight boil. Stir with a wire whisk.
  3. Add tomatoes and fresh herbs to soup.
  4. Season with salt and pepper. Reduce to low heat and simmer for five minutes.

The tomatoes will be slightly soft with the aroma of fresh herbs.

  1. Remove from heat and place in a bowl. Garnish with fresh shredded Parmesan cheese and a sprig of Oregano.

“The fresh herbed tomato soup is very versatile,” said Fred Williams, SVP of Product and Concept Innovation for Ovation® Brands. “You can dress it up by adding a dollop of sour cream or enjoy it in its simplest form as comfort food.”

Williams suggests additional options for enjoying the fresh herbed tomato soup. Take yourself back to your childhood days by serving the tomato soup with a dippable grilled cheese sandwich. If you crave a hot and cold combo, then enjoy a crisp fresh salad with your piping hot soup. Turn your soup into an entrée by adding a generous serving of croutons sprinkled with Parmesan cheese or corn bread. There are so many ways to enjoy this soup, you could spend all month exploring the possibilities.

If you don’t have time to let your soup simmer, Ryan’s, HomeTown Buffet, and Old Country Buffet serve up three soup options every day during lunch and dinner. They rotate their tomato soup with chicken noodle soup, clam chowder, Italian wedding soup, broccoli cheese and other popular selections throughout the week to offer variety for guests. Soup is so popular at these restaurants that over 95,000 gallons of soup are served annually at their over 340 locations.
